Nam Singh-Tao Shi, an ordained Taoist priest of the Dragon Tiger Mountain School, O.M.D., N.C. (Nutritional Consultant), has been traditionally trained in classical Chinese medicine under Taoist tutorage including all eight branches of Chinese medicine: Meditation, Exercise, Diet, Herbology, Massage, Astrology, Feng Shui, Acupuncture and Moxabustion. A graduate of the Tai Pei Institute of Traditional Pharmacology and Acupuncture, a graduate of Wei Chuan’s Culinary Educational Foundation, Taipei, R.O.C. Taiwan, as well as a chef specializing in Chinese medicinal cuisine. Formerly of China Moon and Monsoon Restaurants, he has worked extensively throughout the San Francisco area and presently resides in San Francisco. Chef Nam Singh has collaborated on two well-received books, “Between Heaven and Earth, A guide
to Chinese Medicine” and “The Chinese Immigrant Cooking.”

Nam Singh is the founder of the South Star Academy of Cooking with the Herbs and Teas of China-founded in 1992 and functions as the chief instructor. The Academy’s main focus is to empower individuals with the appropriate knowledge of the Taoist understanding of functional foods (Eating for Longevity) Taoist health sciences and spiritual practices. He is also on the faculty of the Academy of Healing Nutrition, a Holistic Nutrition Coach Certification Program in New York City, London, U.K. and Prague, Czech Republic.
